Preheat oven to 375°. Grease a 13″x9″ baking dish.
Sauté mushrooms, red pepper, and onion in olive oil until soft. Add garlic and continue cooking for one minute. In a large bowl, toss with bread cubes and cheeses. Place in prepared pan.
In a large bowl, mix together eggs, milk, mustard, and salt. Poor over bread mixture. Sprinkle with fresh parsley.
Cover and bake for 30 minutes. Uncover and continue baking for 10-15 minutes until the center is firm and the top is slightly browned. Let cool for 10 minutes. -

- 6 eggs, slightly beaten
- 3 cups whole milk
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 3 tablespoons fresh parsley, chopped
