Mix beef, seasonings, mustard and garlic. Shape mixture into 4 patties, about ¾ inch thick. Prepare onion topping; keep warm.
Grill over medium coals until internal temperature reaches 160°, turning once. Top patties with cheese slices. Cover and continue cooking about 1 minute or until cheese is melted. Remove from heat. Grill bread slices turning once, until lightly toasted. Place patties on 4 bread slices, top with onions and remaining bread.

- ¼ teaspoon dried thyme leaves
- ¼ teaspoon dried oregano leaves
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
- 1/8 teaspoon pepper
