Preheat oven to 350°
In a large bowl, whisk together eggs, milk and mustard. Add croutons, turkey, ¼ cup of the cheese, half of the peppers and half of the scallions. Pour the mixture into a greased 9-inch pie plate. Sprinkle with remaining cheese, peppers and scallions.
Bake for approximately 25 minutes or until the frittata is golden and the eggs are set. Cool for 5 minutes. Loosen edges with a spatula, cut in wedges and serve. - 5 eggs

- ½ cup smoked deli turkey, chopped
- ½ cup shredded Swiss cheese
- ¼ cup jarred roasted red pepper, drained and chopped
- ¼ cup scallion, finely chopped (green top only)
