Serves 6 Ingredients:
  • 6 Country Hearth Plain English Muffins
  • 6 ham slices
  • 6 slices Swiss cheese
  • 12 eggs, divided
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 teaspoon dry mustard
  • Prepared hollandaise sauce (Loafy used a dry sauce mix)
Directions: Preheat oven to 350 degrees. Spray an 11″ x 7″ baking dish with non-stick cooking spray. Separate muffins into halves. Place bottom halves in the baking dish. Place a slice of ham and cheese on each half. Using a paring knife and spoon, scoop out the center of the top halves, not cutting all the way through. Whisk together 6 eggs, milk, cream, and mustard. Pour over muffins. Crack one egg onto top of each muffin. Sprinkle paprika over all. Cover with foil and bake 25 minutes. Remove foil and bake for 10 more minutes or until a knife insert in the edge of a muffin comes out clean. Serve with hollandaise sauce.
