Preheat oven to 375°
Flatten bread pieces with rolling pin. Generously butter 6 muffin cups with 2 tablespoons of softened butter. Line muffin cups with flattened bread slices. Brush each bread slice with melted butter. Bake in preheated oven until the bread begins to get crispy, about 3 – 5 minutes.
Sprinkle bacon crumbles in the bottom of each muffin cup. Crack an egg into each cup; salt and pepper to taste. Top each egg with 1 tablespoon of heavy cream. Bake until the whites are just set, about 10 – 13 minutes.
Top each egg with 1 tablespoon of diced tomatoes and 1 tablespoon cheese. Continue baking until cheese is melted and eggs are cooked to your preference. - 6 slices Country Hearth Whole Wheat Bread, crusts removed
