  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
Cake:
  • 1 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup flour
  • 1 cup fresh bread crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips
Directions: Preheat oven to 350° Mix together 1/2 cup sugar and cinnamon, set aside. Grease a 9 inch baking dish with unsalted butter or shortening. With a mixer, cream together butter and 1 cup sugar until light and fluffy, about 2 minutes. Beat in eggs and vanilla. In a separate bowl, mix together flour, bread crumbs, baking powder and salt. Alternately add the flour mixture and sour cream to butter mixture, beating well between each addition. Pour half of the batter into prepared dish. Sprinkle half of the cinnamon sugar mixture on top, and half the raspberries and chocolate chips. Spoon on remaining batter, then top with remaining sugar mixture, raspberries and chocolate chips. Bake for 55 – 65 minutes or until a toothpick inserted in the center comes out clean. Cool for at least 15 minutes before cutting and serving.
