Combine first 4 ingredients. Cover with plastic wrap and microwave on high for 30 seconds. Stir and continue cooking an additional 30 seconds. Spread 1/3 cup of filling on 8 slices of bread. Top with bread slices. Butter both sides of sandwiches.
In a large skillet over medium heat, grill sandwiches approximately 3 minutes on both sides, or until the outside is golden brown and the cheese is melted and filling is hot. - 2 cups cooked chicken breast, diced
