In a small bowl, combine first 3 ingredients; set aside.
In medium bowl, combine beef, onion, garlic, salt and pepper mixing thoroughly. Shape into 4 patties. Broil or grill patties until internal temperature reaches 160° turning once. Place patties on bun bottoms. Top with spinach leaves and tomato slices. Spread 1 tablespoon of mayo mixture on bun tops and place on burgers. - 3 tablespoons olive oil mayonnaise
